Beschreibung

Nicolle: vegan/vegetarian chef

I am a spontaneous open minded person with a broad work experience.

Vegetarian and vegan cooking has been my passion for more than 20 years. The last couple of years it developed into something more professional. I enjoy every minute of my work as a chef. Love it and want to do it more often!

I worked as a chef for several retreats in Spain and Portugal. Recently, from June to September 2024, I worked, together with another chef, as a chef in an eco retreat centre. We made dinner for 40 guests 4 times per week. I was also in charge of the service and cleaning staff.

In 2023 I was responsible for the organisation, menu, shopping and preparation of food for a festival for over 150 persons.

I am also experienced in food processing, for example making marmalades, chutneys, hot sauces etc. Though my speciality is making raw vegan pastries.

Most of my working career I worked in as a Social Worker. I have taken on many projects, for example communication (website, pr etc), business planning, coaching, training, organising activities and all kinds of other big and small things that needed to be done.

I am a very responsible, organised person who likes to work hard. I take respecting myself, other persons, and my surroundings seriously, I am self-motivated, and seize chances and opportunities as they arise. I also have a healthy dose of humor, empathy, self-awareness and possess strong people skills.

In my spare time I love to sport (fitness, cycling, walking), traveling, working in the garden and reading.

Domi: permaculture & reforestation

Although I finished my study as a Social Worker I felt more at ease in the artistic field, as a painter. To earn some extra money I worked as a bicycle-courier, and for 11 years I also owned my own bicycle courier company. Because I was looking for new life-experiences I sold up and left to travel with Nicolle.

Since the start of our trip I worked at several permaculture and reforestation projects. A natural and simple lifestyle is part of my focus to assist the environment, and I developed skills to actively restore biodiversity.

For the last three years I have planted / seeded hundreds of trees and pruned, watered, mulched a few thousand young trees. Another passion of mine is landscaping; over the last couple of years I found natural solutions to create paths in the forest or stairs on the hillside, and constructed a garden area to shield a house against the wind. Painting a house on the inside or outside or to be a part of a construction project was a frequently asked job I enjoyed. I have also been doing general maintenance tasks frequently, and I assist Nicolle in the kitchen where needed.

I love doing creative things, outdoor activities and sports.

Domi & Nicolle together:

Since October 2021 we are travelling through Spain and Portugal in our own campervan looking for new adventures, meeting new people and learning new skills. We are open to all kinds of workaway jobs but especially permaculture, cooking, self-sustainable life and a healthy lifestyle have our personal interest.

We have been together for a very long time. We each have our own personal qualities and interests, which complement eachother. Domi is the sportive guy and Nicolle is the foodie. We are a great team.
